Crassostrea gigas are oysters raised on the Breton coasts in the Northeast Atlantic Ocean. They are very appreciated by chefs around the world for their firm and delicately salted meat.
Once the mollusk arrived alive at the Breton factory, it is shelled in modern high-pressure tunnels that allow to recover all the parts of the pulp without that the precious mollusk has undergone a minimal cooking.
This pulp is ideal for raw consumption but is also excellent for browning in the pan and for steaming or browning in the oven.
